#30DaysToVegan: Week 2

Week2

Hey everyone, Steph here! Right now I’m doing a 30 day vegan challenge, you can find out more about it here and here.

What I Ate: Yummy food! I ate a nice variety of food – soups and stews and rice bowls and sandwiches. Pictured above: a spinach, tofu, mushroom, and broccoli rice bowl; ratatouille over couscous with a little sprinkle of Daiya; steamed green beans, a big green salad and veggie spring rolls; a veggie burger + salad; a Fieldroast apple sage sausage and sweet potato fries; a veggie rice box with corn, beans and roasted veggies; good old avocado toast.

How I Felt: Good. Again, I can’t say I felt overly good compared to pre-vegan days, but I felt good in general. I got lots of awesome support this past week from friends and family which made me feel great. With respect to keeping up with the vegan lifestyle, I felt totally fine. I’ve been surprised at how much of a non-event it’s been overall. It’s just…not that hard! I’ve also been lucky to have my wonderful mom making some wonderful soups and casseroles I can partake in which makes things easier, but my veganism has gone fairly under-the-radar for me.

Thoughts: Trying to think in terms of abundance instead of lack or scarcity, in all areas of my life. I’ve been thinking about that with respect to veganism as well. I’m trying not to focus on what I can’t have and focus on all the amazing vegan things I can create if I want to. There are vegan versions of literally everything. Thank goodness for the internet!

Anything else? I’m feeling strong for the holidays. I won’t be the only vegan at Christmas dinner, so that’s awesome. I only have to deal with half of the teasing and jokes. ;)
