2 Minute Meal: Red Cabbage and Hummus Sandwich

When Steph and I started our podcast, we had one goal in mind: make healthy, eco-friendly choices simple!

In a pinch, it can be tempting to run out for a burrito or a burger, but it doesn’t have to be hard to throw together a solid lunch.

Lately, I’ve been eating a lot of red cabbage (full disclosure: I was on my own this week and once you buy a full red cabbage, you’re going to be eating A LOT of red cabbage). I’ve been putting it in wraps, on top of vegetarian chili, and now in sandwiches!

Here’s one sandwich you can assemble in minutes:


  • Hummus
  • 1/2 Avocado
  • 1/2 Cup Red Cabbage
  • Optional: Nutritional Yeast

It took two minutes to whip up, and it’s packed with nutrients! Avocado is full of healthy fats, hummus is a good source of protein, and red cabbage contains protective phytonutrients. If you’re adding nutritional yeast, great! It’s often fortified with B12, which contributes to a healthy nervous system.
