In a pinch, it can be tempting to run out for a burrito or a burger, but it doesn’t have to be hard to throw together a solid lunch.
Lately, I’ve been eating a lot of red cabbage (full disclosure: I was on my own this week and once you buy a full red cabbage, you’re going to be eating?A LOT of red cabbage). I’ve been putting it in wraps, on top of vegetarian chili, and now in sandwiches!
Here’s one sandwich you can assemble in minutes:
- 1/2 Avocado
- 1/2 Cup Red Cabbage
- Optional: Nutritional Yeast
It took two minutes to whip up, and it’s packed with nutrients! Avocado is full of healthy fats, hummus is a good source of protein, and red cabbage contains protective phytonutrients. If you’re adding nutritional yeast, great! It’s often fortified with B12, which contributes to a healthy nervous system.
